Matzah Brei (Fried Matzah with Wine)
4 Matzah
1/2 Cup Milk
2 Eggs
1 Cup Sweet Concord – Maneschwitz grape wine
2 Tbsp Nya Fat or Oil
2 – 4 Tsp Sugar

Put oil in large frying pan. Make sure pan is hot before cooking. Crumple up matzah into pieces about one inch square (yeh I know, you don’t have to be exact). Soak matzah in boiling water for 1 -2 minutes and strain (just enough to be soggy).

Put soggy matzah in frying pan and keep turning matzah over till it turns brown. Add a 1/4 cup of wine slowly and keep turning.

Put eggs into bowl and beat until mixed. Add milk and mix. Pour over frying matzah. Keep turning matzah and add the rest of the wine slowly. Add sugar to taste.

Keep mixing in pan until eggs are baked. Serve.

Silver Dollar Sugar Pancakes
1 Cup Water
2 Eggs
Cake Meal
2 Tbsp. (approx) Nyafat (made by Rokeach)

Mix water and eggs, then add cake meal and keep mixing until mixture looks semi-loose.
Heat skillet and add Nyafat. Cook till it melts and covers the pan (almost boiling).
Drop pancake mixture by the tablespoon into skillet. Turn when brown and fry on the other side.

Serve hot with sugar in top.

Makes 10-12 small pancakes (you’ll need to do it a couple of times, it’s that good).
