Real Men Bake – Recipes – Side Dishes

Noodle Kugel (Really good and easy to make)
Ingredients:
1 lb Wide Egg Noodles (cooked and drained)
1/4 lb Melted Margarine
1 Cup Orange Juice
1 Cup Sugar
5 Eggs

Directions:
Beat 5 eggs together then add the rest of the ingredients until well blended.

Grease glass dish (approx. 11 x 8 x 1) and add noodles evenly. Pour mixture over the noodles evenly. Top with cinnamon.

Bake @ 350 degrees for 1 hour.

Notes:
Can be frozen and reheated.
Use as a side dish at dinner.

Dad’s Tsumase (Yams or Sweet Potatoes)
Don’t ask me that’s just the way dad spells it

Ingredients:
1 Can Yams or Sweet Potatoes
1 Can Chunk Pineapple (or crushed)
1/2 Cup Walnuts
Add Cinnamon to taste

Directions:
Mix well and add cinnamon to taste.

Heat mixture on stove or bake in the oven until hot. (Dad wasn’t big on specifics)

It’s also good to add marshmallows on top.

Great Cranberry Sauce
Ingredients:
1 Can Whole Berry Cranberry Sauce (mixed not jelled)
1 Can Crushed Pineapple (well drained)
1/2 Cup Chopped Walnuts

Directions:
Mix well together and enjoy the pineapple juice.

Kim’s Dinner Rolls
Ingredients:
3 1/2 – 4 c. All purpose flour
1 pkg active dry yeast
1 c. milk
1/4 c. sugar
1/4 c. shortening
1 t. salt
2 eggs
pat of butter

Directions:
In a large bowl, combine 2cups of flour and yeast. Heat milk, sugar, shortening and salt, stirring to melt shortening. Add to dry mixture. Add eggs and beat at low speed with an electric mixer for 30 seconds, scraping bowl. Beat three minutes at high speed. By hand, stir in 1 1/2 to 2 cups flour to make a moderately stiff dough. Knead on a lightly floured surface until smooth, about 8-10 minutes. Shape into a ball. Place into a greased bowl, turning once. Cover and let rise until doubled, about 45 – 60 minutes (or overnight in a refrigerator). Punch down, cover and let rise for 15 minutes. Pull and roll into small balls. Top with a pat of butter. Bake at 375 degrees for about 10 minutes.

Baby Carrots In A Brown Sugar Sauce
Ingredients:
1 pound fresh, frozen or canned whole baby carrots
1/4 cup brown sugar

Directions:
Cook carrots in a small amount of water until tender. Drain.
While the carrots are still hot put them in the serving bowl with the brown sugar. Cover the bowl tightly with a lid and shake for a few minutes. Leave the carrots covered for a few minutes to let the brown sugar melt then serve.
